Just wanted to stop by today with a quick video recipe. It’s for Broccoli Mum’s healthy Chickpea Peanut Butter Cookie Dough.

Chickpeas are a fantastic complex carbohydrate. They are an excellent source of fiber, protein, plus they are a nutrient dense and vestirle food. Like other legumes, chickpeas contain resistant starch. This can help to slow the digestion of carbohydrates which helps to regulate blood sugar.

Here’s my variation on the recipe:

  • 4 dried dates, pitted
  • 1 can of chickpeas
  • 1 tsp of vanilla
  • 3 tsps of your choice of defatted peanut butter

Place all ingredients in a food processor and blend until combined and creamy. If it is too thick add a splash of water.

Enjoy 1/4 cup with an apple!
